What I'm looking for is a Linux application that will allow me to edit
PDFs. Is there such an application in Linux?
Maybe this article will be of some help:
Not a perfect solution but this article helped me to find a solution that
worked for my needs. Make sure you have ghostcript installed, install flpsed
then do the following.

Use pdf2ps to convert the pdf to a postcript file

Edit the ps file in flpsed - You can click anywhere on the pdf to enter text, basic font size selection is available, and you can click and drag the text box to align with fields of the form.

Save it back out as a ps (or optionally print it from the program)

Use ps2pdf to convert the ps back to a pdf

Open in adobe acrobat reader to make sure it looks okay
